This is very similar to Long John Silver's fried fish recipe and may be the same. Courtesy of Dixie Snow of Tacoma Washington who first showed me this recipe 30 years ago.
Season the dry fillets first with your favorite seasonings, salt pepper etc before dumping them in this batter.
1 1/2 cups flour
1 1/2 cups water
2 teaspoons baking powder
1/8 teaspoon baking soda
1 teaspoon salt
2 teaspoons white vinegar.
Cut fish into manageable cubes etc. Mix the other ingredients but be sure to add the vinegar last right before you want to fry as it keeps the bubbles in the crust lighter(remember the Brady Bunch episode or your cub scout experiment making your own volcano with baking soda and vinegar?) same principle. You may have to add water to make the batter the consistency of thin pancake batter.
