Well folks, my uncle just e-mailed from Corpus telling me about having a grilled hammerhead steak last night, from the latest offshore trip for those behind the times............... He said it was GREAT!!!! Not too fishy and not too bland, and he also admits to not being all that good at fish cookery [although he is an excellent cook overall] AND is was cooked on a flame only freeking gas grill!!!!!
Heck fire, this has me stoked to thaw one out and get after it!  _________________ Dave

He seemed very surprised at how good they were! I guess it's true that some "swordfish" steaks you get in the store are some type of shark. I know that the color, muscle texture and pattern of dark meat going through the steaks looks EXACTLY like the last few "swordfish" steaks that I bought!!!

LLBB, I grilled about 2 pounds of that shark Saturday, it was great. Cute it into steaks about 2" x 2" x 6". Sprinkled on some fajita seasoning, brushed on some butter with a touch of garlic, and layed them right on the grill. Used a gas grill with a piece of wet oak. It was really good. Had some left overs for Sunday lunch. Mixed up a chipotle cream sauce, warmed the steaks slowly in the oven... another good combination.
My wife really enjoyed it and even one of my daughters asked for seconds .

Glad that you got some Charles. Cripes, I'm ready to catch some more hammerhead.................................. AFTER some time at the gym AND with better equipment!!!!!!!!!!!!
I'm thawing one out for tonight!
On our next trip I'M staking out a spot at the back of the boat to live bait fish. Catching all of those beeliners was fun but I'd rather have a chance to catch fewer but bigger fish that are also easier to process into BIG eating portions!!!

Heck, corner or not, I would be fine using live bait on a drop rig at the side. Big bait = big fish! Then everyone is even: we all have 12 oz wights with our lines drifting in the current. No more and no less of a chance of tangles than fishing with cut squid. I would rather fish on the down current side though. Cripes, fighting that shark and ling was work enough. Having to winch BOTH of then from down under the boat while fouled with the other side's lines [just the ling, TWICE! ] REALLY put the strain on this homeboy's butt! _________________ Dave

I grilled [ONLY charcoal and mesquite will do!] a steak tonight after a brief soak in saltwater, FRESH lime juice and a shot of triple sec. It was great! Even my non fish loving better half likes it. Although the fire was hot, 5 minutes on each side of a 1" steak still left the areas around the skeleton rare and still had some of that "sharky" smell. Didn't effect the taste though.
I don't know about y'all but I like strong flavored fish [like shark] cooked until just flaking all the way through. Stuff like tuna is a whole different ball of wax though! All in all, a very worthwhile catch and definitely worth the $$$ and trouble to clean and get home. _________________ Dave

maybe next time we can catch a few black tips.. much better than hammer heads imo..
as for the fishing.. back end of the boat is the place.. little more room..
but from the whole trip it was well rounded round up.. _________________ Fish and Hunt Baby.... so tight lines and clear scopes. |
