as i said in an earlier post i am going to PINS 9-13 thru the 18 with a group of about 10 of us. i was just curious and wanted some input the food that ya'll take with you. maybe i can find something different than the usual. we normall bring burgers, dogs, taco fixin's, fry some fish, potatoes and onions, with breakfeast tacos the usual morning meal. sandwiches are normally gone after day 2. i always bring some canned chili, and soup just in case. Earl Cambell hot links are also a dietary staple. just looking for some different ideas...thanks

we like at least one night with a nice ribeye, foil wrapped baked potato with all the fixins, grilled peppers (red, orange, yellow). We also try to have an "on the stick" meal where everything is on a stick. Sweet potatoes are good too.

If you don't want to cook sandwiches and sandwich fixings are great as are cold fried chicken - no plates and they come with their own handles. Smile

What Tyler said works for me also, but every now and then its fun to cook-out on the beach do some burgers and dogs, steaks. But if you are going for simplicity ...the less you take down the less you have to bring home and clean up. Man, some cold fried chicken sounds really good right now. Very Happy

I think that just about anything that would not spoil easy would be good. We always ate the food in the cooler first and the canned food second.

Try some fish stew. Its reaaaaally good and you can cook it right on the beach using whiting, drum, whatever. It is hearty too...eats like a real meal:

Fish Stew

Adapted from a recipe learned from Byron Noles of Flour Bluff.

2 medium size onions diced (it helps to chop all of the vegetables prior to the beach trip. Put them in storage baggies . It saves lots of chopping and cutting in sandy conditions.)

1 carrot chopped

1 stalk of celery diced

1 large can of crushed or whole peeled tomatoes

1 can rotel tomatoes

4 cloves crushed and minced garlic

3 bay leaves whole

1 small can of niblet corn or one ear of fresh cut from the cob

1 and a half pounds of fish fillets cut into half inch chunks. Whiting, redfish, black drum and sheepshead work well. Shark does too but cook it longer.

One pound bacon or polska Kielbasa style sausage cut into half inch chunks. Chorizo can be substituted as well.

6 medium sized new potatoes or yukon golds - best (russets will work but get mealy) cut into half inch chunks. Larger chunks work fine but take a while longer on the stove.

3 cans of chicken broth and four more of water (variable you can also skip the broth and add more water and a couple of Knorr fish stock or chicken stock cubes)

One chopped chipotle pepper (optional if youre guests are whimps Smile )

1 teaspoon fresh ground pepper

1/2 teaspoon seasoned salt

Over medium heat in a large pot, brown the bacon or the sausage first and remove. Then add the celery, carrots and onions and cook until clear. Just about when the onions are clear add the garlic.(over cooked garlic gets bitter) Deglaze the pot with white or red wine or a can of beer , then add the chicken broth, canned tomatoes, chili pepper, water, corn, bay leaves, potatoes, and bacon or sausage into the pot. Cook until the potatoes are fork tender and then add your fish and let cook until just done and ready to serve. Scallops and or shrimp can be added or substituted but make sure you add the seafood last to prevent overcooking. Serves at least 8 and with a couple of loaves of garlic bread would serve more. If more people show up add more water and potatoes! Sometimes we throw in some green beans or whatever anyone else has to stretch, bell peppers etc.

My wife always gets some marinated fajitas from HEB and cooks em over a flame. She sometimes takes the makings for ceviche too! Damned that is good on the beach with a Corona!

Ive cooked dove and quill wraped in bacon with jalapeno slice inside the breast. squash,zucinni,fresh mushrooms,fresh corn and red new potateos
sliced in butter wraped in foil.shisk ka bobs ,meat, sausage,cherry tomatoes,purple onion squash and zucinni.or shrimp. freezer bags are good to take to keep foods sealed in ice chest away from water, (melted ice) keep a large ice chest with just ice to prolong it, and to fill up other ice chest when needed. menudo precooked taken in a freezer bag is a good breakfast or later around the campfire,It will hit the spot.Or the
classic ribeye,newyork with a baked potatoe and roasted corn never fails.

As long as I can keep fishin while the cooking is being done, I'll eat anything! Otherwise, it's sardines, potted meat, of Vienna sausages!

that does sound good. A note about the Fish Stew it is great too especially when it is cooler.
It helps to pre chop the vegetables and meat and toss them in quart ziplocks before hitting the beach. Anything you can do to minimize the chance of sand contamination helps too. Chorizo works but we ended up calling this one "Who let the dogs out Stew" Very Happy
