Neighbor went offshore today before they headed out they brought me knives to sharpen for them. Hopefully they will come back with some good eats. If anything they had some very sharp knives. _________________ I LIKE MINE FRIED. |

I use a whetstone. My favorite is my oil impregnated Norton combination 8 inches long. I can get a rough knife to shaving in a few minutes. I usually stop there. I could break out the big 6000 grit and make it like a razor blade but people end up cutting themselves really bad and I have found that a blade that sharp doesnt last any longer. Theres a lot of variables involved. A razor sharp stainless fillet knife left outside will lose its edge just sitting out in the elements. Stainless means stains less it doesnt mean it wont rust. That sharp thin edge is the first to go. _________________ I LIKE MINE FRIED. |

I use a similar method called the "scary sharp' method. It goes out to 1200 grit sandpaper, and I agree that the knife becomes so sharp and cuts so easily that it can be dangerous without extreme caution. _________________ Now that food has replaced my sex life I can't even get into my own pants!!!!!!!!
