the cook reminded me that Tyler was correct, the pin perch was only fair eating actually i'd call it bait, it was the Real ' PIGGY PERCH ' that was so tasty

I took my son fishing during the croaker run and he caught a bunch of them. He wanted to keep every one of them. I didn't want to but did it anyway. Fried them up and they were delicious.

I have never eaten piggy perch.

How exactly do you prepare them whole? I grew up catching trout in Colorado and learned a pretty slick trick for taking the gills and guts in about 30 seconds. They don't have big scales so eating them whole wasn't a problem. Then I moved to Missouri and starting catching and eating Bluegill and Crappie. But, we filleted all of them.

Is there a trick to Piggy Perch? Do you just cut them up the middle, pull out the guts and scrape the scales off? I assume you just bread 'em and fry 'em after that. I'll eat just about anything once, especially if i know how to prepare it.

Fix them just like sunfish. Scale them and cut the head off and gut them. Then dip in egg and roll in corn flake crumbs and fry. After cooking just split down the back bone and pull out the rib bones and you have one big boneless piece of fish. Very Happy

I grew up fishing with my great-grandfather. We would go out every day while my mom worked at NAS, wading along the JFK causeway or at Humble channel.

We never kept any perch but lots of folks did back then, you would see fishermen carry them off by the burlap sack full. (wetted burlap kept them fresh. No one had coolers then)

My great-Grandad called them "poor folks fish". We always caught some huge flounder with them in the Humble.

Gad, remembering that shows how old I am. Wink

John, your comments make me want to ask you if your great granddad put his shrimp in sawdust and a paper sack to keep them alive? We did, but that was in the 40 &50s.

We bought shrimp in the 60's in Port Isabel in sawdust. Most of them would die by them we walked out the jetties. I think keeping them cooler would have help alot more.

Glad you did Bayfly just saw Tarzan, Bluffer and Rabbit posts for the first time in a long time......
When I buy live shrimp I still ask for the bag with sawdust even though I have my live well to put the shrimp I don't use in before I stick them in the freezer it keeps them super fresh for later use.

no joke about an old post.
Saw Ernies old post and WTF.... Looked at date.. then scrolling to some Old Salty Dogs names that are fishing 24/7 Laughing and smiling at us...

for some reason, down in the Valley --- Sawdust and ice in a brown paper bag, then a plastic bag if you didn't want to stink up the car would keep shrimp alive for almost all day in 100 degree temp.

poo poo havent done that in 35 + years, but have told a few peeps.
