So I paddled offshore with a bunch of friends last Saturday and just got around to putting the video clips together. I paddled back to shore thinking it was an OK kind of day - until I looked at the video. The fish weren't giants. but they kept hitting two at a time, and working with the gear and rods was kind of fun. After I whittled the clips down to an acceptable length, I didn't have time to include anything instructional. Oh well, I can give pointers later; I had fish to juggle on this one! Very Happy

The secret is to get all the red meat out. After that just cut it thin (1/4") and dip in egg then roll in blended Ritz crackers. Fry until brown and serve with the sauce of your choice. You'll be surprised how good it comes out. For an easy way to fillet and store them, I made a video (I know, surprise surprise Very Happy )

have you ever heard of balling the kings? you cut slits and push out this white ball of meat, thats how i always did it. but will try your way. does the ritz crackers work with other fish also?

I have given snapper, cobia, triple tail, kings, Spanish, pompano, flounder, trout and reds the Ritz cracker treatment and they were all good. Balling kings is a common method, but it misses a lot of meat and the edges of a fillet taste just as good as the centers.

When my kids were younger I would cut the fillets into "fish sticks" and they would eat twice as much, lol.

He likes his fried.......nice. It's also good on the gas grill with some garlic butter for baste and taste. Just don't over cook it. I love me some kingfish. Very Happy

Anything that's good cooked on a gas grill is WAY better cooked with charcoal and the wood of one's choice! Cool
