Harvested my first head of cabbage this weekend, and I must say, after never growing my own, it was a really good experience. Planted a '45-day' variety, the 4-pack grew like gang-busters. Picked one and made a "Southern Fried Cabbage' recipe that I paired with a brisket and some potato salad, and it was gone in a flash!

The recipe called for onions, bacon (& grease!!), some chicken broth, and a touch of apple cider vinegar. It really was good.

Next in line is some 'cabbage steaks' done with olive oil and salt/pepper, in the oven broiler. My new favorite from the back yard - cabbage! Cool

[Curse You Cut-and-Paste limitations on Corpus Fishing..... Evil or Very Mad ]

Ask and You Shall Receive!

5 to 6 strips of bacon
1 head of cabbage - sliced
1 onion - diced
1/4 cup chicken broth
1 Tbsp vinegar (I used apple cider - for the flavor)
1/2 tsp salt
1/4 tsp pepper

In a large skillet (I used cast iron) fry the bacon until crispy - remove to a paper towel to drain
Place onion in the skillet with the bacon fat over medium heat and cook until it begins to get translucent - add the cabbage until it starts to wilt
Crumble the bacon and add to the pan
Add in the chicken stock - vinegar - salt and pepper.
Cover and allow it to simmer for 10 minutes
Serve hot

This was a big hit last night!

cabbage stew...
cabbage of course...
gold/red or whatever potatos.
carrots.
onions.
garlic.
celery.
bell/green/pblano pepper, optional.
corn, optional.same w/squash and about any other veg, short of root veggies(turnips,parsnips...)they need a longer time like carrots..
water or chicken stock/sausage water( what you boiled yer deer sausage in for brats and buns...)
can do this 2 ways.. crisp fry bacon and crumble or keep it soft/boiled....
in a big pot add chopped bacon(raw or fried) onions, seasonings Cajun or whatever you like...
throw in sliced sausage.. any kind...optional...not needed

what you do is add ingerdients as to cooking time.... longer time stuff first(carrots/taters)faster stuff later Squash, tomatos...
plan on all of it being done about the same time... Tex-Mex,sure.. chile powder/comino/// Cajun..same way....don't throw chopped garlic in a naked pot... it burns and gets bitter...
beer, Very Happy , red wine Very Happy white wine.. Very Happy same...
crumbled sausage,, sure!
ham! yup!
sometimes the cabbage is lightly fried in the pork fat and then added...
pretty much run w/what ya have as long as there's cut cabbage and pork fat.... Very Happy
