Anyone have a marinade or brine recipe for smoked kingfish? I work with a guy that competes in the Terlingua cook off, so I know he will get the temp right, and am giving him king to smoke for the office.

Be sure to not soak the kingfish fillets or balled out meat more than 30 minutes using that brine recipe. King mackerel is one fish that really accepts brine and salt rapidly.
