Cole Park pier this time of year has worked for me in the past...just don't fish it at night, some shady peeps hang out there...

The platforms and wellheads in Corpus Christi Bay hold TONS right now. I know it isn't exactly common for a boater to launch to go catch sand trout, but it is all you want out there during the fall of the year. Also there is a reef about a mile directly east of the cole park pier that has droves right now too. _________________ Fish hard. You never know when you'll make you last trip south. |

| Wait till dark and go to the old pier at the end of Ennis Joslin by the campus. We used to go fill a cooler almost every weekend. Spec rigs and gulp shrimp work great anything that glows in the dark. |

There are two types of trout with out spots. Sand trout and Silver trout the only way to tell the difference is by counting the anal rays.  _________________ Fishing and Kayaking its a rough life but somebody has to do it. |

After you catch them, what do you do? From what I've heard they do not take well to freezing.
A story I heard, was that Chef Yankee, got a good start catching dandies in the morning and selling fish sandwiches for lunch. Have caught them myself, and cooked them up that day, and tasted just like specks. |

The flesh is not as firm as other fish, but not anywhere gummy like ladyfish.
We freeze them in vacuum bags. We have found that freezing in water makes any fish softer. We also drop them on ice in our cooler within a few seconds after unhooking them. We were advised that sand trout will soften if not iced down right away. We filet the catch, ice cold, right off the ice . . . indoors not in the sun. We drop filets into a bowl of ice water until we check over the batch for overlooked bones, etc. Then we bag and freeze them.
But we filet all our fish that way.
My wife is an excellent cook, who can fry fish without having any greasy coating. Fresh or frozen, we usually eat sand trout and whiting as finger food by picking up the entire filet.
The cooking process can affect the texture of fish too.
I also like sauteed fish without breading, but for that I prefer a firmer fish with flaky texture. |

Sand trout is pretty tasty I think very similar to whiting IMO. I was so hoping to do some fishing this weekend on the surf but looks out of the question with this wind. I might hit the pier on base Saturday or Sunday night.
I did some salmon last night very simple preparation olive oil and my own spice mix grilled on an indoor "George foreman" type grill drizzled w lemon as it cooks. Was really good. Anyone ever try the steelhead trout they have at heb? _________________ I like fishies |
