Trust me beachbum, if I could reach the AJs with my kayak I would pay them frequent visits. I just wanted to show people a way to make a good meal out of kingfish .

I usually take my kingfish and coat it with a little mayonaise, sprinkle tony cachere on it and then grill it. Turns out excellent ......

Fresh Fried Kingfish is some good eatin for sure. It is very important to ice 'em quick though. My old man smokes Kingfish and boy is it good!! He smokes Bluefish the same way and they're awesome too.

I never would have imagined an AJ "season". It'll be a while before I get used to that. But, unfortunately, limits of AJ's on party boats is a rare occurance. Most folks love eating snapper. Limits are.... doable. At least no one will fell left out on the way to clean the fish.

So, catching them on the jetty, and letting them sit in the sun for a few hours isn't such a good idea? Who would have thunk it? Laughing

I understand that it's not a perfect world, and I didn't and don't mean to hijack this thread. I was only speaking of what would be the best fishing situation for myself and others of the same ilk.

If people aren't catching legal AJ's on party boats, it may be their own fault. One doesn't HAVE to use the cut squid that's provided! Wink Having said that, I caught at least 3 AJ's on the first OS trip using cut squid with the last one being legal size. Last year I started out jigging and my first two or three fish were legal size AJ's that had to go back in because they were "out of season". I also caught a nice Almaco Jack (GREAT EATING) using live bait from the bait tank. Jigging and live bait seem to target larger fish and something besides beeliners and red snapper, no surprise there!!!

Back on topic, I also caught two kings jigging..............................

Ice, fillet fish as you desire. After you have filleted the fish and prep for cooking here's what I do to Kingfish:

1. Let the meat sit in ginger ale for 30-40 min. I use canada dry.

2. Marinade with zesty italian dressing for another 30min - hour or whatever you desire.

3. Smoke the King with the zesty marinade for 30 min. Indirect heat! I use foil not completely covered.

4. whatever is left over store/save for another day and you can eat it like tuna salad.
