My wife came home from the store the other day with a nice surprise for dinner- 6 lobster tails. After some debate we decided to cook them out on the grill. Much to my dismay, though, as we dug in the meat was damn near impossible to pull out of the shells. Basically I treated them like I would jumbo shrimp on the grill, figuring the meat would separate from the shell once it was done. So, where did I go wrong? Or was it just the tails' fault? I love lobster but don't want that to happen again. Ideas?

Split them first. I think if you cook them over a very hot fire they tend to get stuck, though not as bad as you are describing, assuming you are cooking the spiny lobster tails.

the way i do it is crack the tail right down the middle, grab the meat and pull it up out of the tail **not all the way, leave the end in the shell** then place the meat flat on top of the tail. the presentation is real nice that way also. as it cooks the pretty white meat fluffs up around the tail, kinda like a big fluffy muffin of seafood goodness..... Very Happy

Best way to cook lobster is to do them like would would cook crawfish - Louisiana style. I like liquid boil spice mix. Just add a big table spoon full per 2 gallons of water with your corn, onions, red potatos and garlic.

I like this stuff:
