we had a good shoot a couple/3 weeks ago...
well my buddies across the tank did...
I was on the wrong side Mad
anyway, we picked them, left the heart in and floured and fried in peanut oil...
served w/corn relish, pickled okra and Spanish olives...
oh and Shiner beer Very Happy

fried them in peanut oil...
maybe an inch deep...
hadn't had fried doves in yrs...
if you get the oil good and hot and fry the whole picked bird, when the breast meat is done, the wings and legs are crunchy crispy Very Happy
munch 'em up like a possum. Laughing
like fried whole perch (sunfish)...crunch 'em down.

I brine them in saltwater for a couple of weeks in the fridge, then filet the medallions, soak in buttermilk overnite and fry. Really good that way as it ages the meat and removes most of the liver taste.

have piled up quite a few doves and my group is making noises about a dove fry...
we need 6-8 more dozen for a baconwrap grillin' too..
