Red fish filet, shell on, wrapped in foil, lots of fresh veggies. Put your spin on it.

Not so much a recipe but a method.
Redfish on the half shell. Filet the fish leaving the scales on (very important). Lay scales side down over hot coal. apply whatever you like to the flesh side (butter, lemon juice, olive oil, herbs, spices, rubs, etc). Don't flip the filet. Just allow the heat to cook the flesh all the way through. The scales will protect the meat from burning and keep the filet from sticking to the grill. When done, the meat will pull right off the skin/scales just like an oyster on the half shell! Very Happy

Like mentioned above with the scales.

I like to use zesty Italian dressing. I like more of a cooked texture so I don't wrap it in foil. The oils help keep it from drying out.

On the half shell as above with butter Tony C's, or Italian dressing or your favorite seasoned salt and pepper.

When I grill fish, I make a basting mixture out of 1/2 softened butter, and 1/2 mayonnaise, plus whatever seasoning you prefer. I like a lot of dill. Ranch dressing mix is good, too. The mayonnaise holds the butter in place and the oil in the mayo helps keep the fish from drying out, too.

Half shell is always good but my wife doesn't care for the taste of the red line. So, I filet them off of the shell, cut out the red line, leaving four filets per fish. I use Fiesta fajita seasoning or Tim Love's fish rub then grill over mesquite. Flip once and apply ranch dressing to the top plus either crushed onion rings from a can or crushed tortilla chips. Did I say cold beer? Killer.

haven't tried this on redfish, but a big bull dorado filet cut from forehead to tail..(he was 5ft)...
skin on... hot mesquite coals...let 'em coal down till less smoke...
slather the fish w/lots of Mx Mayo..(mayonesa) it has extra lime in it...
generous shake of Old Bay seasoning...
anything else is your call...
grill till done skin side down only.
Very Happy, in fact uber Very Happy

My favorite recipe with redfish is marinated grilled redfish. It is a simple recipe, yet very spicy and tasty. I love to grill redfish with spices like cayenne pepper, black pepper and herbs like sliced onions and lemons. I get all these herbs and spices from Horton Spice Mills store in Canada. When we grill marinated redfish, the taste and flavour of the dish are enhanced by the sauce we use for marinating the fish. Then I place it on a hot barbecue grill with skin side down.

Crushed fire roasted Italian tomatoes , garlic, onions, olive oil, chicken bullion cube, butter if you want, Italian seasoning to taste, simmer all together pour on top of your red , grill and then chow down. IMS'S Redfish dish . You and also do it with just fillets cooked halfway in a skillet then pour on the sauce and finish it.
