| Most all high end kitchen knives are set to a 12Degree angle (heinkle- Whustof- Etc). If you find a pre set ceramic rod holder for this angle. You can reproduce the factory edge. With the exception of keeping the knife perfectly vertical upon pass through. Unless you have the muscle memory a belt sander with 2k wet paper. I did purchase one of the new ken onion belt sanders with the adjustable angle guide. Hands down the best investment I have ever purchased. I butcher a minimum 15 deer a year and at least 10 hogs. Between friends and family in the Hill County's target rich environment. I need my knives at their top performance repeatedly and fast. I also heavily agree with Rat too. I have an oversized Arkansas stone that I used for my large butcher knives until just this last year. If I was there I would be glad to come over and get you fixed up. |

12 degree is more like a filet knife...17-24 is kitchen

15 deg Forschner
For butcher knive edges Filet, Slicing, paring, and related work
For chopping and tougher work against bone. 22deg plus is needed for added durability. |

| What are you after? Most anybody can get them shaving, but that edge takes maintenance. If you are after some ever-sharp edge like they talk about on TV, well I've never found anyone that can do that. |
