Anyone know of a good batter recipe(s)? Thinking of frying up some black drum or red.

I usually use a mixture of cornmeal and all-purpose flour(a little less flour than cornmeal) and tony chachere's seasoning to taste. I use this for all kinds of fried fish and shrimp as well. Haven't had a complaint yet!

We've been using Lousiana Hot Sauce then Zataraine's Fish Fry. Just pour some sauce in a plate, dip both sides then dip in fish fry seasoning. Realy crisp and good without being too heavy!!

Depends on your personal taste. I personaly like less cornmeal than flour. Cornmeal is a little too gritty. My kids favorite is a mixture of seaoning with flour and some Jiffy cornbread mix. It gives it a little bit of a sweet flavor. Just experiment until you find what your family likes. With fresh fish you can;t hardly go wrong. I have been wanting to try Surfin Sappo's Rooster sauce marinade that he had posted in the cooking thread. Might be kinda spicy for young kids though.

I use zatarans crispy fish fry, then egg whites with grey poupon mustard mixed. Dip the fish in the egg/mustard and then cover it in zatarans and fry!

i do a sleeve or 2 of saltine crackers, put them in a bag and beat them to a fine "dust"...mix in a cup or 3 of flour, depending on the amount of crackers, then add Slap Ya Mamma cajun spice...

Pick your favorite flour/crackers/corn meal/panko/etc.... mix, and the 'broke da' mouth' secret is some LA Hot suace&Mustard mixture for a "wet" coat before the mix. But it's got to be this one:

Go to the BBQing Grilling..... Board and look for my Fish Taco recipe that I posted a week or two ago. It is a great batter recipe.

I got this recipe in Louisiana from a retired, drunk gator hunter. Good for fish , gator, oysters, shrimp, nutria. Add or take away as you like.

WET

1 cup mustard: yellow or Creole

2 beaten eggs

1 cup buttermilk

soak fish for at least 30 mins

DRY

1 cup yellow corn meal

2 cup white flour

1 cup corn flour

1/2 cup corn starch

1 tbspn salt

1tbspn red pepper more if you like spicy

1 tbsn black pepper

2 tbsn garlic powder

2 tbsn onion powder

1 tbsn Mula Magic or store bought season salt

Liberal amounts of parsley, chives, and Parmesian cheeze

Dont forget to salt , pepper and garlic the fish to taste. Or use Mula Majic.

Best served with fried taters, onions, corn bread, pecan pie, and Tennesee whiskey.
