Thanks again to Deputydawg for the feral hog goodness. I cooked these on the pit two hours uncovered at 250 then popped them in the oven at 250 for another four hours wrapped in foil with a half a bottle of Apple juice on the bottom. Then finished with a brush of Stubbs Spicy and under the broiler.
For some reason it takes a lot longer for the feral hog ribs than normal pork but they are worth it!

another easy way to do wald hog ribs (especially if backstrap meat is still on) is to slop zesty itailian salad dressing over them while SLOWY roasting them over mesquite coals.
sop the meat, turn and drink a beer.
repeat six times
just about the right timing.
keep a pile of coals going on the side in case all the dressing puts down yer fire.
