This is a super easy recipe that even ______ can make it....
Preheat your oven up to around 500 degrees ... Put the rack around the center part. Now take some super heavy aluminum foil and make squares large enough to wrap the size fillet you have. Pour some Olive oil in the middle of the foil and than add your Cajun Seasoning. I had to use "slap Ya Mama" because I was out of Zatarains Zesty which is much better for the recipe...Lay the fillet on the oil and Cajun seasoning and then drizzle more oil on top and add more seasoning. Fold the foil oven the fillet to make it look like a metal burrito... Lay them on a baking sheet and put in the oven for 30 to 25 minutes... Turn your oven vent on too.. there will be smoke if done correctly... Take out of the oven and let rest for 10 minutes or until warm enough to cut open... Serve with a bed of white rice..... Enjoy!!!

You can get it at Morgan Street Seafood Market. BUt "Big & Zesty Original Creole Seasoning" make all the difference.... It is so good you can eat it right out the container....

Thanks for the tip. I'm going to try Big & Zesty. Used Paul Purdhomme's redfish magic for years grilling fish on the half shell and have been looking for a change.
