Personally, I would pick a smaller one for eating and I would be sure to bleed it out and preferably gut it too before putting it on ice. When on ice I would pack it's gut cavity with some of the ice - of course this is what I like to do with all of the fish I catch that are legal to do it to. It's amazing what the difference proper care of fish makes. I have been out with guides whose idea of icing down fish is some water in the bottom of a 50 quart cooler with a couple of frozen 2 liter bottles of ice in it. Nah - that is letting dead fish rot in a fish scum soup.

When I set up a cooler for fish, I first like to place a complete row of frozen 2 liter bottles across the bottom of the cooler and then crushed ice on top of the bottles. The bottles let the water and fish slime run down to the bottom of the cooler and the fish remains above it at all times. The slime water can be drained off as needed to keep it away from the fish.

There sure is a lot of meat on them suckers though.

caught a jack about 6lbs..smoked it, has a dark blue/maroonish color and it tasted nasty nasty Mad

hook one have a good workout and release them.

Cook the Jack on a cedar plank, then throw the Jack away and eat the plank.It's gotta taste better.

I am a retired Navy Supply Corps Officer. Ran General Messes on 3 different ships. Would have been fun to feed you. We used to serve rabbit, but always held back half the wings from the chicken we served. Used to cook the wings up with the rabbit. Crew ate rabbit just like chicken. never a complaint.

Jack is probably best depending on how it is cared for and how it is cooked - same with any fish. Remember prior to Paul Prudhomme the same kinds of things were said about Reds.

Paul's claim to fame is he blackened a piece of redfish which was a good move on his part. We were eating redfish at my house way before him. As for jackfish never gonna happen. As for rabbit in navy yes it was ok so was the lobster. I never cared for eating farm raised bunnies from South America.

That stuff was neither rabbit nor chicken; by all accounts it was sea gull.

Two Aggies borrowed my barbeque pit to cook a jack once. They spent all day basting and turning it, but said it didn't start to taste good until they'd drunk two bottles of home-made pomegranate-mustang grape wine. Oh, maybe I got that backwards. Confused Perhaps they said it didn't stop tasting bad until after drinking the wine; it has hard to understand their words by then. Laughing

As for mullet, the answer is it depends on where it came from. I've eaten fried Florida mullet which tasted like speckled trout (and their gizzards like chicken gizzards), while fried Texas mullet tastes like mud. Have never eaten jack, but I wonder if the same taste differences might not be true of jack depending on where they were caught.
