I was at the butcher shop 2 days ago and he told me the sign on the front door said "no pets allowed" so I decided to buy a fresh, never frozen pork butt from him. He's a great guy. I marinated it in Allegro for 30 hours in the fridge. I smoked it at 250ish for about 12 hours in the small WSM. I took the rest of the Allegro and boiled some beef sweet breads in it and then put them on the smoker as well. This pulled pork is the best I have ever made. I'm not sure if it's the fresh butt or the Allegro or both.. I am making them this way from now on. Made pulled pork sammies and garnished them with homemade cole slaw. Man there ain't nuthing better than a fresh pork butt or ham cooked to perfection on the pit......and thats a picture of perfection. Good job sapo!

how did the sweet breads come out??????

Glad to see that the rain and trumpets didn't keep you from making an awesome meal. I love mollejas. Too bad the wife hates them and won't even let me buy them when she is with me at HEB.

The sweet breads were good. I ate them with my neighbor Rudy. I heard they were high in cholesterol so I will eat them less. They are cheap at HEB too. I got the whole pack for two something...I better be quiet or HEB will raise the price... Shocked Shocked Shocked
