Someone asked me to show a video of how to Fillet a red fish and trout with one hand. Technically" I'm useing two hands but, I never let go of the knife. I only touch the fish with one hand the other one stayed clean.I try to keep one hand clean just in case I need to go in the house to get more bags or answner the phone. You naver know...

That is how I fillet fish too. What kind of sharpener do you use for that fillet knife? It looks razor sharp. Great video!!!!

I was wondering the same thing before I read your reply, that knife is super sharp. I hope some one on this forum knows a good way of sharpening knives and would not mind sharing their secret. I have all types of stones, hand held devices you name it but there is always a different way of doing things that makes life easier and better.

i sharpen my knives the old fashion way....with a whet stone and water.

Jeez..... Clean that table off before you remove the fillet from the skin!!! That's just nasty.

If you really want to get some good pointers on cleaning fish, such as the different knifes that are most effective for what fish, and which method works best for different fish (going from the head back, versus going from the tail up), spend an hour or so at the cleaning stations when the head-boats come in. I personally learned a TON from watching Raymond at Fisherman's Wharf.

And yes, a good sharp knife is the key. A stone and water or a diamond stick makes the job of cleaning fish go that much faster.

That's the only way I've ever known to clean a fish.
I was expecting a guy w/ one hand doing the whole thing.

Mostly but I sometimes use one hand to hold down the tail while I pull the fillet back towards the head (one a redfish) to pop the rib bones. I wish I could sharpen my Dexter Russell better. I guess I need to get another whetstone and have IMS give me a refresher course.

I use a Chef's Choice diamond hone sharpener. It is electric and does a fantastic job quickly. Just follow the instructions exactly and it works great.
