i have a question for all the people that have experience with tuna. i just got back from my offshore trip a couple days ago..when cleaning the fish i noticed a bunch of narley lookin white/yellowish "things" all in the meat. its not worms....i have no freakin idea what the shizzle is in my meat... Rolling Eyes has anyone seen this?

those appear to be parasites. some worms look like worms (long & round). Some don't. can you dig one out & take a pic of it & post?

Yikes, I thought tuna were generally parasite free. Do they wiggle when you touch them?

to me it looks like fat. the Japanese actually pay really high dollar for fatty tuna. I think it related to the marbling you would find in a good ribeye or t-bone. I think it looks strange because it is not cross cut. Here's what they call Toro. In the second picture, if you look close, you can see little spots, just like in yours.

No offense John, but that ain't marbling from toro, chu-toro, o-toro or kama toro. I've eaten far too much of the stuff and helped prep/shock freeze/prepare some of the best stuff around. Both the grand daddy big dolla stuff (bluefin) from your pics, and the lesser big eye. Albacore/yellowfin/blackfin marbling even looks less like the bluefin marbling in your pics.

through our travels in the Gulf we do occassionally get into tuna that have flesh like that, off colored, nasty looking. we never figured it out, we typically just "release" the ones like that, and its quite a bummer for a fish that size. you can tell right off the bat when you cut into them.

Right we "released" a yellowfin that looked just like that. It broke my heart.
