| Any knife gurus know a decent priced unit to draw a new edge on fillet or utility knives? I don't want to brake the bank. I have hones to maintain but some have chips and I'd like to have an electric version to bring them back. |

Been using this one for about 10 yrs. Takes a little practice. Run it through the first stage until you get a burr on one side of the edge. I usually skip stage 2. Run it through stage 3 very lightly & slowly several times. Little expensive at $150 or so but it's been worth it for me. Redfish dull a knife quick. At least my cheapo knives.

I agree that if you are not sharpening by hand a belt sander is absolutely the best for you and your knife.
Next time you are in a meat market ask a meat cutter how he sharpens his knives and maintains the edge. |
