That's what it looked like going into the oven, so a new nickname was born!

First, completely debone a whole chicken, doing the "cut down the backside and work the flesh off all of the bones" method. Remove the thigh and leg bones, as well as the wing bones.

Fill your "floppy" chicken with a boudin/bell pepper/carrot mix and fold into a square baking dish. This one just barely fit, and it began to look like a square chicken loaf as I was topping it off with just a dusting of seasonings.



Bake at 350 until you get an internal of 185 in the boudin, and then slice across the entire bird for plates-o-goodness!!!
