Question for all you crab cookers:

When I have harveted clams and oysters from muddy waters on the east coast, I have submerged them for an hour at a time for a few changes in clean clear saltwater, and I find that they purge a lot of the mud and the resulting flesh is much clearer. Have any of you tried purging your crabs in clean saltwater before cooking (obviously not so long that they drown from depleted oxygen in the water).

Answer... Our waters produce good clean tasting seafood. I have never really noticed any difference by purging crabs as I don't eat the guts. Its been ages since i've had a muddy tasting crab. It's a good tip for the cautious consumer.
I also eat mt oysters right out of the sack. yum yums. Very Happy If i gotta purge oysters...I ain't eating them. IMS

Crabs were the only thing eating at the sail boat channel other than a few rat reds. Ended up taking home 20 or so fat ones on Friday. Great steamed!

[quote="Seabass"]While I agree with IMS on most culinary advice, I have to interject and highly recommend the boiling method. True, they do get full of water and that's what I love. I enjoy breaking off the front appendage (the one with the claw-called the chela), pulling out the movable finger from the claw (dactyl), and sucking the cajun spiced juice out like it was a straw. That's just me, however and I've eaten steamed crabs as mentioned and they are fantastic also. I boil my crabs with Zatarrain's, adding lemon, whole and cut garlic, halved onions, and a couple other things....saving the beer for my liver..heh

rock claws....steam,boil,sautee. use nut crackers or a hammer and just crack the shell. Dip in drawn butter. yummy stuff there. As far as the traps, checken backs work , so do fish heads.
