a lot of hard core fish cleaners will have 2 different knives.
the first knife is considered a skinning knife (beef skinning) kinda like one of these http://www.dexter-russell.com/2008/Search_form_result.asp?type=cat&search=06 the idea is with that curve, it's easy to cut towards and away...
then a traditional "fillet" knife is used to skin the fillets. any skinny, flexible knife (that can keep a good edge) will do just fine here.
but, that's a bit more than most people ever need... i prefer a knife that can do both. the knife i've been using for about a year now (very very satisfied, holds an edge well and is very affordable) is a "breaking knife" from calcutta. it has a pretty good curve to the blade so i can cut away and towards, as well as skin fillets very well. |

I have used my share of electric fillet knives thinking I had to purchase in fishing section until a friend told me to try the electric knife you use for carving turkey at Thanksgiving.
I know at Walmart they are in appliance section on top shelf. They are in a small box and you have to look hard for them. I bought mine a year or two ago, and they are around $10.00.
It is best fillet knife I have used, and it is still going. One of main things I like about it is flexibility. Another is the cost.

My brother makes amazing custom fillet knifes. I am not sure how long it takes to make and he is in the middle of selling his home but he might be able to get you one quick.
You tell him what you want it to look like and he will make it. He made my uncle one for christmass and nobody could believe how nice it was, even me!
e-mail me at sambo8387@aol.com and i will see if he will make one for ya, not sure the cost but I think it is reasonable for a custom knife that will hold up for years.

Sambo, those knives sound awesome!
Here's a site that a person ought to be able to find a fillet knife on. Dexter/Russell, Forschner and Knives of Alaska. Wish I had one of the KoA fillet knives.

We got my dad a Wüsthof Fillet Knife a couple of years ago for Christmas. The knife has a great feel to it, good material, great balance and holds a good edge.

| I've had a cutco fillet knife for about 4yrs and i love it. It's a little expensive but worth every penny. |
